    2-hydroxy Arachidic acid methyl ester is a hydroxylated fatty acid methyl ester that has been found in sediment samples from the Harney River and in petroleum ether extracts of I. eriocarpa.1,2 It is also a volatile flavoring compound in anhydrous milk fat (AMF) that is reduced by treatment with the lipases lipozyme-435 and TL-IM in a time-dependent manner.3 [Matreya, LLC.
